夏になると鱧をする。
いや、逆に鱧をやりだすと夏な気がする。
いやいや、ちょっと待て。
日本語がおかしくないか？＞おれ



当然の如く、つまみ喰いしてみました。
うちでは２００６年の初なので(笑

今回は鱧ですが、一般的に生き物が食材になるということは、
その生物にとってみればこう言えると重います。
字面としてインパクトありすぎなので平仮名で書きますと、
”いたいそんかいさぎょう”であります。

近年、この作業を知らない人が増えたように感じます。
というか、ほとんどの人が知らないでしょう。


「しめる」で「さばく」です。
たけのこでいえば
「掘って」きて「食べやすいように切る」です。
表現はいろいろありますね。
「摘む」とか「下ろす」とか「うったたく」とか「剥く」とか「げっと」とか「終了」とか。

肉でも、野菜でも、魚でも、生命がなくなると云うことと、
食べ物として食卓に並ぶと云うことの意味。
このイメージが薄れてきてると感じます。

だから、食事前の「いただきます。」がわかりにくい。
ほどんど、条件反射ライクで「いただきます。」です。
もしくは、条件反射すら忘れてる(笑

「美味しい」
この言葉の意味を考えると、感謝の念しか出てきません。

「ありがとう。」、「いただきます。」です。

では、鱧のいたいそんかいさぎょうの一部をさらっと。

まず、”ごいたい”です。





頸の後ろにコロシを入れてありますので、血糊がちょっとグロチックなので、
モノクロにしてみました。
鱧のスタイルを知らない方に説明しますと、ウナギとウツボをミックスした感じを
イメージしてもらうと６０％くらい当たりかと思いますです。

これは歯というか牙というか、鱧の唯一の武器です。（やはりモノクロ）





鱧は変わった奴みたいで、真ん中一列の歯並びです。
一列ですが、その威力は絶大です。噛まれたことのある漁師の談ですが、
瞬間、「ｂQっｓｂ１っｖ！っ！」
言葉にならない痛みに襲われ、なおかつ素晴らしい根性を持っている鱧ですので、
その痛みは、
「あくぉ位q：い…g：亜kgfさkgふぁzgkdspfkg美8亜3q4なldfcklrn)\\@q321223ii4l2tdfkkgdsbg…」
激痛に耐えながら、けっして離そうとしない鱧を必死に説得するらしいです。（不本意ながら体罰あり）
　
たとえコロシを入れた後でも油断は出来ません。
というか、なかなか昇天しません。動きまくるときがあります。
猫をかぶってるときもあり、まな板に載せてさばこうかと頭を押さえた瞬間、ガッ、ガッと
噛み付こうとします。幸いにも今まで小指を掠る程度ですんでますが、
いつか根性見せられるのでないかと覚悟してます。
（ホントに強烈なアゴ筋と牙です。出刃を噛ませると、
ガチッ、ギリギリギリ～と恐ろしい音がします。）

で、あっさり開かれて

　



真っ白でつやつやした美味しそうなごいたいです。
美味しそうですが、ちょっと待って下さい。
鱧は骨切りがルールです。骨切りについてはまた別の記事にしますが、
とにかくルールです。（一部例外あり）
